Simply melt a knob of butter in a frying pan and toss in a few handfuls of whatever nuts you fancy. Toast for a few minutes, dab out on kitchen roll and sprinkle with your seasoning of choice.
I went for a trio of salt, stevia granules (no calorie sugar substitute) and chilli powder. I couldn’t decide which was my favourite flavour until I shook out the remainder of all 3 pots into one and discovered the delights of a flavourful lucky dip.
I love toasted almonds! Those look good and speedy too. I tend to sit with a bowl of almonds in boiling hot water and pop their skins off at Christmas and make spicy nuts. It reminds me of my childhood, it was something my Mum did. They also plump up a bit too. It does take time though 🙂

Very nice! Funnily enough, I did some experimenting with almonds yesterday…used toasted almonds instead of croutons as a garnish for a tasty home-made veg soup. x

Great idea using the stevia! I love to do a version of Nigella’s Union Street bar nuts but this looks a lot more straightforward
