making Nigel Slater’s Festive Chocolate Flapjacks


Much as I like to cook I don’t really watch many food programmes.  I do like Nigel Slater’s Simple Cooking though and I think it’s because he’s so down to earth and says recipes are just a starting point and changing it to suit your own taste or what’s in your cupboard is just fine.  Just as well really as that’s exactly what happened last week when I made Nigel’s Festive Chocolate Flapjacks and had to replace his cranberries, sour cherries, figs, walnuts and ground almonds with what was in the cupboard – dried apricots, dates,goji berries, almonds and dessicated cocounut.  See the link above for Nigel’s original recipe  – quantities below are my adapted recipe doubled up to make 16 chunky squares.

What you’ll need

  • 100g each brazil nuts and almonds
  • 60g each of dates, dried apricots and goji berries, pumpkin seeds, sunflower seeds
  • 2 tbsp dessicated cocounut
  • 100g butter
  • 200g caster sugar (I didn’t have any so used granulated)
  • 4 tbsp golden syrup
  • 200g porridge oats
  • 150g rolled oats
  • 200g dark chocolate (I only had a 100g bar, hence dipped ends rather than halves! – delicious using Divine’s Dark Chocolate with ginger and orange)

  • Turn the oven on to 180C/350F/Gas 4.
  • Roughly chop the nuts and dried fruit then add to a food processor along with the other ingredients and half the pumpkin seeds. Add a spoonful of dessicated coconut and blitz together – but not for long – leaving nice sizable chunks of the nuts and fruit. Tip into a large mixing bowl along with the rest of the whole pumpkin seeds.
  • In a pan melt the butter with the sugar and golden syrup, trying not to stir it too much and allowing it to melt together gradually.
  • Once melted mix in the oats and the fruit and nuts and spread the mixture out evenly in an oven tray lined with greaseproof paper then bake for 25 minutes (having doubled up the recipe my chunkier flapjacks took about 10 minutes longer)
  • When the flapjacks are baked, cut them into rectangles.  When cooled and hardened dip them as far as you dare into melted chocolate.
  • Allow to chill for 20 minutes in the fridge and then serve.
    It wasn’t just Nigel’s drool inducing Simple Christmas programme that prompted the flapjack making.  My friend Jenny gave me a really thoughtful ‘mum-to-be’ bag of goodies which recommended a flask of hot chocolate and flapjack as fine night feed companions.  It’s my due date today but there’s no sign of baby coming so I think I have time to make some more of these flapjacks since all 16  have gone already ….

    Gorgeous looking flapjacks Nic, the chocolate makes them look so decedent and yet they contain so many goodies. I liked the gift in a jar idea too. Roll on that hot chocolate and more flapjacks!

    Jac – we had posh chocolate last time. Today’s batch is with value dark choc but I’m sure they’ll still be lovely

    Tried Nigels recipe but the amount of butter (50g) and syrup (2tbsp) was simply not enough to bind the other ingredients so I ended up with a toasted muesli. I checked his other recipes for flapjacks and he has used 150g butter and 175ml syrup so am thinking the BBC ingredients list is wrong, wrong wrong. Not impressed

      Hi Michaela, thanks for sharing your experience of making Nigel’s flapjacks. It’s gutting when a recipe doesn’t turn out as you’d hoped. I’m not familiar with any of his other flapjack recipes – what quantity of sugar is recommended in other recipes you’ve tried? I found the 100g sugar used to make the buttery syrup mixture was more than enough to bind everything together.

    update 4-12-14 – it had been a while since I made these and when I did a few months ago, double batching them, for a charity bake sale I had a bit of a panic thinking they’d failed (just as Michaela described as the seemed very crumbly as I cut through them). But i then remembered that they harden as they cool and to just walk away and put your feet up after a baking session! They were a roaring success at the sale dipped in melted Terrys Chocolate Orange so you know what to do with your leftover chocolates after Christmas …

    I’ve made these so many times since first posting nearly 5 years ago. I still half dip them, usually with whatever chocolate is on offer. My favourite is still melting Terry’s Chocolate orange and who doesn’t have one of those knocking around after Christmas!

We loved seeing all the hand made signs warning us where to walk to protect the bluebells.  I'm so grateful for this week's sunny spells.

I had a gorgeous bimble on Haresfield Beacon with I had a gorgeous bimble on Haresfield Beacon with the boys yesterday.  We parked at our favourite Standish Woods and walked the 30 minutes to the top.  We took a wrong path at one point and had to scramble like mountain goats up the side of the  hill (absolutely the highlight, such fun!). While Euan and I took some pictures on the trig point Luca took himself off to admire the view.

The boys were amazing with running around and walking all the way back too.  They didn't complain until the final uphill stretch but rightly so as it was hard going.  It's so good to get outside and it's a long time since my body has felt hot and our of breath from exertion!
Expect this to be my look from now on! Totally di Expect this to be my look from now on!  Totally digging my Soundcore wireless, noise cancelling headphones. I mostly listen to Audible books, sometimes music, but think I may well just wear these to shut out the day to day noise 😆

We were blessed with sunshine for our walk on Stinchcombe Hill.  The boys loved the bunkers on the golf course and we were able to get some gorgeous food to take out afterwards from @leafandground (such a treat to be cooked for). Of course the best birthday present was bunking off school work for the day! (For Euan that is, I'm now cracking open my anatomy folder for an hour for tomorrow's college session while G gets the boys to bed).
Last week I felt overwhelmed, exhausted and frustr Last week I felt overwhelmed, exhausted and frustrated.  Home schooling children while trying to fulfil all my other commitments wasn't working out so well.  I realised this when robbing from my sleep bank resulted in the tell tale headaches that lead to a migraine.

This week, with the start of a new month, I resolved to prioritise rest (everything gets ugly on rubbish sleep!). I need 8 hours sleep.  I need quiet time to stretch (without children climbing on me or asking for food!). I need to walk in nature.  I need to connect with people outside my family, as Nic, not always as Mum to Euan and Luca.  And sometimes I need to moan, to stop holding everything, to let the stagnant energy out and the fresh loving energy in.

I drew up a list of what supports a headache free life and started ticking things off (I did this on day 3 so have no guilt about those blank boxes at the start of the month!). I'm resolved to keep up the ticks.  I expect there will be days with gaps (like today's rain thwarting a nature walk) but I'm ok with that too. 
.
The day I drew up my tracker I also decided to draw a cards from my Lunar cycle oracle cards deck and the Universe has your back.  I think they confirmed I'm on the right track.  Taking care of your body can never be a bad option to go with!!!

We were all so happy to have woken to snow today. We were all so happy to have woken to snow today.  Last time the boys played in the yard in PJs and boots first thing and an hour later it had all melted.

Snow doesn't stick in the city so today we found a hill.  George's Dad had made the boys a sledge from an old car seat.  What fab recycling 😊🛷

I'm grateful for my essential oils to help with concentration and focus.  I need them today as I'll be sitting my Infection Control exam online later as well.  Hoorah for not having to travel anywhere though #silverlinings

Euan loves Dav Pilkey's Dogman books and in the back of the latest one Grime and Punishment are instructions for making your own lunch bag monster.  Euan just got straight onto making his monster and I enjoyed making Luca's.  Munchy then went on a rampage at the park 😆

We went for the muddiest walk today but it was so We went for the muddiest walk today but it was so good to get outside.  Luca did a spectacular welly boot save when the mud suckered it off but he managed to land his foot back inside it without falling over.  The boys were wet through by the time we got back to the car.  They soon warmed up at Grandad's sat in pants watching cartoons and eating crisps.  A pretty stellar day all in all!

We're lucky to live in a fab city where historic sites, green spaces and waterways are all within a 20 minute walk from home.  It seemed the perfect day for getting a few pics to round off the 2020 album.  According to G the days of "normal" smiles in photos are long gone.  We live with a pair of comedians!
