Autumn colour on the plate
making chunky oven-baked ratatouille
1 large red onion, cut into chunks
1 large courgette, cut into chunky pieces
1 large aubergine, cut into chunky pieces
1 red and 1 yellow peppers
450g small tomatoes
4 garlic cloves, chopped
3 tablespoons olive oil
several sprigs fresh herbs (I used oregano)
- Place all the vegetables into a roasting tray or shallow casserole dish
- Sprinkle with salt, pepper and herb sprigs
- Drizzle with oil and mix with your hands so they all get coated
- Cook uncovered for 30-40 minutes, until browned at the edges and tender
- Serves 4

That Dahlia is a gorgeous colour, will have to give the recipe a go, looks nice and easy.
The ratatouille looks so appetizing, I love it done like that and I often add a few olives and capers too once it’s cooked to give a bit of extra zing. What oven temperature do you use?

I’m a bit fussy with my ratatouille. But if it looks as good as yours, i’m willing to give it another try.

Anne – oh I missed it out didn’t I. 200 degrees C. I recipe book suggested 240 degrees but I find things burn when I have my oven that hot!

Ooh–I love that dahlia. My mother-in-law is crazy for them; grows a field of them in horse country on the east coast. What kind of dahlia is it?
wow a whole field of them would look breathtaking. I bought this dahlia rhizome at the end of the sowing season for a £1. Fabulous return don’t you think :o) Anyway in answer to your question it’s a Semi Cactus Spectacle Orange. Let’s hope it weathers the winter ok to come back in full glory next year
