making sweet pickled crab apples

These gorgeous cherry like crab apples came from my friend Sara’s ornamental crab apple tree.  They’re quite different to the crab apples I picked from Reg’s 40 year old tree in the summer.  The crab apple and clove jelly I made with those was a lovely orange colour and tasted delicious but I wanted to try something different with these; something that would retain their beautiful shape and colour.  Sweet pickled crab apples were the result and we’ll be in for a treat if they taste as good as they look.

To make sweet pickled crab apples

300ml cider vinegar or white wine vinegar
400g granulated sugar
25g fresh root ginger, bruised
5cm piece of cinnamon stick
1tsp allspice berries
1kg crab apples
1tsp cloves

  • Put the vinegar, sugar, ginger, cinnamon and allspice berries into a large pan over a low heat, stirring until the sugar has dissolved, then bring to the boil.  Turn down the heat to a simmer. (note for next time: increase volume of liquid (by a third) as not enough to sufficiently cover the fruit in all of the jars and had to hastily make more.  If there’s too much liquid it can easily be used in other preserves)
  • Remove the stalks and blossom tops from each crab apple and prick with a fork to prevent the skins from bursting.  Add to the hot vinegar.  Simmer very gently until they are tender but not too soft.  Remove with a slotted spoon and pack them into warm, sterilised jars.
  • Bring the spiced vinegar syrup to the boil and boil for 5 minutes, then strain it over the crab apples.  Cover the jars with vinegar proof lids.  Consume within a year.

This recipe is a variation of Pam Corbin’s ‘Spiced pickled pears‘ from the River Cottage Preserves Handbook.  You could use almost any fruit and spice combination – just consider how long you cook the fruit for so it doesn’t go too mushy.  I reduced the cooking time for the crab apples and reasoned the vinegar would continue to ‘cook‘ them over the next few months if they were a little under-boiled.

Before boiling up the fruit I dry packed the crab apples into my chosen jars to check how many I would need and to avoid over-handling the fruit once it’s softened. I thought they’d make nice christmas gifts so invested in some small 110g jars.I had enough crab apples left to make another small batch of crab apple jelly; an unadulterated pink blush coloured crab apple jelly.  Straight up, no fuss.

    These pictures of the crab apples are beautiful. How about showing us a picture of your store cupboard, with all you bottled produce – I bet it looks gorgeous! What a great Christmas gift they make.

    Beautiful photographs. Have some beautiful ornamental crabs – some red, some yellow. I too wanted to do something different – felt these would look (and taste) wonderful on Holiday table.
    So sorry the recipe is in metric. Am sure many of us out here are not familiar with those measurements. But will continue checking the site.

    thanks Sara. You’ll not be disappointed if you preserve your apples in this way.
    Imperial measures for the ingredients would be:

    – 300ml vinegar = 10.14 fl oz
    (I’d do 11 fl oz as I recall having to boil up a little extra fluid to cover all of the apples in the jars)

    – 400g sugar = 14.1 oz (if increasing vinegar increase sugar accordingly)

    – 25g root ginger = 0.88 oz

    – 1 kg apples – 2.2 lbs

    Still working my way through this.

    I have a question, if it is not too impertinent. I usually keep jam jars and lids from a variety of shop bought stuff, but when making vinegary preserves I use cellophane, but no lids. These days I have to transport many as gifts, and so lids would be better. Can I just ask, can I see cellophane under the lids that you have trimmed? If so, is there a secret to making it look so neat, and do you still use elastic bands to secure them?

      Hi Fiona. It’s lovely to see you working your way round my preserve shelves :o)

      I recycle all my jars too but when I made Marrow Cream I lost a few jars due to dodgy lids. I decided to use cling film as a protective inner liner so that if the jars ever got up ended and came into contact with a faulty lid the contents would be fine.
      So I pull off a strip of cling film, fold it in half and place over the top of the jar as soon as it’s filled. If you use a single layer of cling I’ve found it pops a hole through when the vacuum seal is created. The cling sticks to the glass so no need for a band.
      I screw on the lid immediately and then when the jars have cooled down I trim off the excess cling film using cuticle scissors (curved blades make it much easier).

I had a gorgeous bimble on Haresfield Beacon with I had a gorgeous bimble on Haresfield Beacon with the boys yesterday.  We parked at our favourite Standish Woods and walked the 30 minutes to the top.  We took a wrong path at one point and had to scramble like mountain goats up the side of the  hill (absolutely the highlight, such fun!). While Euan and I took some pictures on the trig point Luca took himself off to admire the view. 
.
The boys were amazing with running around and walking all the way back too.  They didn't complain until the final uphill stretch but rightly so as it was hard going.  It's so good to get outside and it's a long time since my body has felt hot and our of breath from exertion!
Expect this to be my look from now on! Totally di Expect this to be my look from now on!  Totally digging my Soundcore wireless, noise cancelling headphones. I mostly listen to Audible books, sometimes music, but think I may well just wear these to shut out the day to day noise 😆

We were blessed with sunshine for our walk on Stinchcombe Hill.  The boys loved the bunkers on the golf course and we were able to get some gorgeous food to take out afterwards from @leafandground (such a treat to be cooked for). Of course the best birthday present was bunking off school work for the day! (For Euan that is, I'm now cracking open my anatomy folder for an hour for tomorrow's college session while G gets the boys to bed).
Last week I felt overwhelmed, exhausted and frustr Last week I felt overwhelmed, exhausted and frustrated.  Home schooling children while trying to fulfil all my other commitments wasn't working out so well.  I realised this when robbing from my sleep bank resulted in the tell tale headaches that lead to a migraine.

This week, with the start of a new month, I resolved to prioritise rest (everything gets ugly on rubbish sleep!). I need 8 hours sleep.  I need quiet time to stretch (without children climbing on me or asking for food!). I need to walk in nature.  I need to connect with people outside my family, as Nic, not always as Mum to Euan and Luca.  And sometimes I need to moan, to stop holding everything, to let the stagnant energy out and the fresh loving energy in.

I drew up a list of what supports a headache free life and started ticking things off (I did this on day 3 so have no guilt about those blank boxes at the start of the month!). I'm resolved to keep up the ticks.  I expect there will be days with gaps (like today's rain thwarting a nature walk) but I'm ok with that too. 
.
The day I drew up my tracker I also decided to draw a cards from my Lunar cycle oracle cards deck and the Universe has your back.  I think they confirmed I'm on the right track.  Taking care of your body can never be a bad option to go with!!!

We were all so happy to have woken to snow today. We were all so happy to have woken to snow today.  Last time the boys played in the yard in PJs and boots first thing and an hour later it had all melted.

Snow doesn't stick in the city so today we found a hill.  George's Dad had made the boys a sledge from an old car seat.  What fab recycling 😊🛷

I'm grateful for my essential oils to help with concentration and focus.  I need them today as I'll be sitting my Infection Control exam online later as well.  Hoorah for not having to travel anywhere though #silverlinings

Euan loves Dav Pilkey's Dogman books and in the back of the latest one Grime and Punishment are instructions for making your own lunch bag monster.  Euan just got straight onto making his monster and I enjoyed making Luca's.  Munchy then went on a rampage at the park 😆

We went for the muddiest walk today but it was so We went for the muddiest walk today but it was so good to get outside.  Luca did a spectacular welly boot save when the mud suckered it off but he managed to land his foot back inside it without falling over.  The boys were wet through by the time we got back to the car.  They soon warmed up at Grandad's sat in pants watching cartoons and eating crisps.  A pretty stellar day all in all!

We're lucky to live in a fab city where historic sites, green spaces and waterways are all within a 20 minute walk from home.  It seemed the perfect day for getting a few pics to round off the 2020 album.  According to G the days of "normal" smiles in photos are long gone.  We live with a pair of comedians!

Not your usual shopping list for Christmas Eve eve Not your usual shopping list for Christmas Eve eve but loss has been such a big part of this year and the opportunity to remember loved ones together is so comforting.  We don't have candles at home since a near accident with a cat tail many moons ago so  Luca and I dashed off into the rain this morning to get some beautiful vegan plant wax candles from @idunspirit .  We'll join the circle of light remembering loved ones tomorrow at 7pm.

My Mum passed away peacefully at @sueryderleckhampton 2 years ago and I was touched by the idea of a shared remembrance on Christmas Eve.  I bought a candle for my Dad and dear friend who will be missing her Mum too. 
.
Sending love and courage to all who are heavy hearted missing  loved ones this Christmas.  Especially to those who are missing a parent, sibling or child.  3 friends have lost Dad's in the last week and the pain of wondering how to make sense of life without them is the journey they now face.  Lean in to support and feel all the feels.  Huge hugs dear ones x
