There are three reasons why I don’t freeze allotment veg 1) there isn’t usually the need if we pick and eat and share it regularly 2) we only have a teeny freezer box 3) I tried freezing carrots once with spongy and tasteless results. With bags of runner beans picked before going to Germany I gratefully accepted a friend’s offer of space in her freezer. I searched for secrets of the art of freezing and puzzled over the question of blanching; I found as many people advising ‘always ,always, always blanch‘ as though saying ‘never, ever blanch‘. In the end time was the deciding factor and I opted for the bung-it-in-and-see-what-happens method of freezing. One box of beans was left whole and the other chopped up ready for chutney making just in case defrosted beans suffer the same soggy fate as carrots.
